To celebrate National Women’s Small Business month Trailblazer BBQ decided to catch up with a proud Trailblazer BBQ owner and successful businesswoman, Pauline McGurk. Pauline is one of many ‘Winning Women’ in the outside catering business.

Having spent 20 years as a successful catering manager and becoming the only woman to be awarded a Jenus Award for Management Professionalism in Large Scale Catering in the Head Chef category, Pauline was offered the opportunity to take early retirement. This opportunity was perfectly timed as earlier in the year Pauline had came across Trailblazer BBQ at the IFEX catering exhibition and already had visions of her next venture.

Pauline founded Dot’s Kart BBQ in 2015, focusing on offering a unique outside catering service targeted at the corporate and private event sector. Dots Kart has catered for builders, bishops, birthdays and even top food critics. Just two years on and Dot’s Kart has been awarded the Best Mobile Catering Service in Mid-Ulster District at the 2017 Northern Ireland Business Awards.

How did you go about starting an outside catering business?

“I knew that I wanted to focus on private parties and corporate functions rather than street food or event catering. Deciding to go for the Trailblazer 600s Grillmaster, I bought my Trailblazer and got it branded to act like a free mobile marketing billboard, designed my brochures and went from there.”

“I was lucky enough, being in the catering industry for as long as I was, I had already established good contacts.”

Pauline feels that the unique presence of her Trailblazer is the reason why she hasn’t had to invest much time or resources into marketing efforts.

“Word of mouth has been a great marketing tool for me. BBQ catering, specifically on a Trailblazer is very unique and therefore gets the crowds talking.”

Standing out from other mobile outside caterers?

As part of the ‘You Book It, I Cook It’ slogan, Pauline supplies her own food, crockery and cutlery to the booking. Pauline choses to only cook food that she has produced freshly or sourced locally to ensure she is delivering the highest quality of service and food safety.

“With Dot’s Kart, all the client needs is somewhere to sit! This ties in beautifully with Trailblazers self-sufficiency as I can literally pull up anywhere and start cooking without the need of any electric, water, gas etc. Factories really appreciate this ability!”

“I recently catered for 300 workers on a building site that had no resources apart from a small tea hut. Using my Trailblazer and one helper the 300 men were refueled and rehydrated within 70 minutes.”

Pauline distances herself from other caters by offering a range of unique and diverse specialties such as eel, pollen and buffalo to help add to the theatre associated with Dot’s Kart.

“I put on a purely buffalo BBQ offering buffalo burgers, steaks and sausages for the neighbours of a local farm who were watching the herd being reared and wanted to sample it for themselves.”

How has your Trailblazer benefited Dots Kart?

“My Trailblazer BBQ stands out and often receives positive comments from customers. I recently received a message on my business page asking for information on my Trailblazer and how I found the use of it.”

“It’s self-sufficient, needing no help or use of water, gas or electric. This is very beneficial in outside catering as it means I can cater anywhere without the need of external resources. This factor and its mobility has allowed me to cater where others cannot!”

“I offer specialties such as fresh eel from a local fishery in Toome. The fishery invited three food critics, (including Xante Clay and Jeremy Lee & Charles Campion) down for a boat tour and wanted me to cook some fresh eel for them to sample. This opportunity was perfect as I was able to take my Trailblazer right down to the edge of Lough Neagh and cook fresh eel for them as they got off the boat tour.”

“Overall for outside catering, Trailblazer’s flexibility is brilliant as I can cater for customers with a tight budget, however I can use the same machine to cater for a high end party where money isn’t a problem.”
