Graduating from Leiths School of Food and Wine in 2010, Tony has always been passionate about cooking. After gaining a wealth of experience in a variety of kitchens throughout the world, Tony soon felt it was time to do something for himself….
….Onfire Catering was born in 2018 as Tony started serving delicious BBQ’d food straight from a Trailblazer 1200 Festival.
Tony (The Manquenian) leads the team & holds the role as catering director/chef, whilst his partner in crime (Jo) is the backbone of the business. She deals with the event management & client liaison, whilst also bringing some of the sweetest creations to the table through her sweet delights.
Little over 7 months on, we decided to touch base with Tony & Jo to hear how the start up was going and more importantly, their thoughts and feedback on the 1200 FESTIVAL
“Our aim was simple when starting up, and that was to provide the finest “grain fed” heritage meats to our customers and produce them in a sustainable way.
For that reason, charcoal was the only real choice for us, plus the fact it adds a nourished, unique taste to our foods.”

What events are you targeting with your Trailblazer BBQ?
“We currently us our Trailblazer throughout a variety of events across the Northwest, from weddings, private hires to festivals and birthdays.
We have recently just secured the Manchester Jazz Festival that runs over 5 days. This will be our biggest festival event to date and we can’t wait!
Another great thing about the 1200 Festival is that it allows us the flexibility to do small and large events with minimal changes to do in between. Once onsite, we are up & running in under 30 minutes.”
How do you market Onfire Catering?
“Our marketing has very much been by word of mouth recommendations from previous events, we have a series of events booked out for 2019 with the summer months being well on the way to full.
What would you say to someone thinking of getting a Trailblazer BBQ?
“Go for it, we are blazing our own trail, you should too! Once you have a look at a Trailblazer in person, the advantages will stand out and the rest is easy.
We are super happy with our Trailblazer, everyone praises it wherever we go, it’s the original tailgate barbecue.
The 1200 Festival lets us manage everything we need and the after service offered by Lester and his team was also great.”
